Marinated salmon in maple syrup and soy sauce

For the marinade:
6 pieces of salmon (150-200 g) without the skin and without bone
4 tbsp of maple syrup
4 tbsp of soy sauce
For the julienne :
3 tbsp olive oil
2 small carrots
2 small courgettes
2 cloves garlic, finely chopped
Salt and pepper
For the sauce:
100 g butter
10 cl single cream
3 tsp mustard
1 tsp curry
2 tbsp dill (chiseled)
Presentation and final touch:
10g of Parmesan shaving
80g of soft chorizo

Marinate the salmon pieces in the maple syrup mixed with the soya sauce during 1 hour (in the refrigerator).
Preheat the oven to 240 ° C.
Chop the vegetables in julienne (fine sticks) then in a frying pan with some olive oil, fry gently the vegetables with the garlic chopped during 10 mn. Add salt and pepper.
For the sauce:
In a pan, melt the butter. Incorporate the mustard, the single cream, the curry and the dill. Salt and pepper. Keep the sauce warm.
Put the salmon pieces into a dish and bake at 240C for 6 or 7 mn.
Put the salmon pieces in the plates and top with the julienne and the curry sauce. Add on the top small strips of chorizo, with Parmesan and dill.
